Very true, and very commendable. But, like New Zealand, how scalable is it? Many people who do eat meat don't have the skills or the luxury that would allow making that choice. (Sidebar: If we can't agree as a society to wear a piece of cloth over our faces to save human lives, how do we agree to restrict and pay more for our pleasures to keep animals from suffering? En masse, we just aren't self-sacrificing enough.)
And it's a growing problem. There are more humans on earth, and over time, we're eating more meat per person.
My source* for the graphs says: "As a global average, per capita meat consumption has increased approximately 20 kilograms since 1961; the average person consumed around 43 kilograms of meat in 2014. This increase in per capita meat trends means total meat production has been growing at a much faster than the rate of population growth."
