Toy story and Monsters Inc were both stories about outcast members of "normal" society who teamed up and achieved good things together. Same with most Disney "classic" underdog TV/ films. Inclusivity and diversity are part of what you loved about them. Same with "Cars, "bugs life" and most other kids movies. They gave us all hope without boundaries.
They've just updated their themes for the modern, more inclusive audiences that might otherwise not feel included. Same concept though.
You probably enjoy nostalgic films and TV because it reminds you of simpler, happier, less complicated times when your needs and responsibilities and life pressures were less complex.
Story lines and originality are where Disney struggle now, replaced more by blockbuster special effects and seeming unnecessary inclusion for inclusivity and diversity's sake.
