When talking about matters of opinion a scientist and an average Joe are both equally correct. When talking about matters of fact a scientist who is an expert in the field is more correct than the average Joe.

True.

However, in instances where people say "It's my opinion masks/vaccine doesn't work..." Versus ... Science. Stupid. Average Joe is punching above his weight.

Nah, I think this repeating of what you say, and changing the political alignment of what you say accurately reflects your projection.

As for the argument?

Simple:

Would you rather have someone cover their mouth when they cough while speaking to you. Or would you have them just cough in your direction?

Opinions are not inherently true. Who fed you this bullshit?

That is my point. On matters of opinion people can’t be correct. On matters of facts they can be.

No, opinions can be true or untrue based on real information. Your opinion, while entitled to it, isn’t inherently “true.” But it may be.

Let’s say your opinion is you can jump off a 29 story building and walk away. Your opinion is wrong. You can have that opinion, but it doesn’t mean it’s true or correct. My opinion is you’d probably die. My opinion is correct, right, true …. Whatever you wanna call it.

But whether you can survive is a matter of fact.
