It's completely Americanized. You might find a few dishes like you get here, but it's rare. I get you. I used to love buffets too so I could sample this and that, but real Chinese food is very different. They eat way more veggies and the meat is in smaller portions most of the time. And they use everything. For lunch we had shrimp that had been stir fried. They had removed nothing. SO I ate it head and all. The flavor was awesome, the shell bits were not.
