This seems to be a somewhat popular meme concept despite it basically being fake news.

Coal power plants currently only account for about 25% of electricity produced in the US and that percentage has been on the decline for the past 5 years (maybe longer?)..

In addition to that, I'd tend to assume coal power plants are becoming more efficient as time progresses (less coal needed = less input cost for the power plant to operate).. and that a fair amount of the people driving electric cars might also have solar panels specifically to help with charging their car. But even if I am totally wrong about these assumptions, I'm pretty sure my first claim is accurate.

You're probably right about coal power plants. The point of the meme is that liberals think that, since electric cars produce zero emissions, they are "saving the planet". But they totally ignore the fact that most of the electricity they use to charge their cars is produced by sources they oppose; such as coal, nuclear, hydro electric (they want to get rid of the Hoover Dam and others).
As far as electric cars that run/recharge from soar - we're a long ways away from that being reality.

Coal is probaly at the top of the unpopular list depending on who you ask... I hadn't heard about the Hoover Dam.. is that really a thing? Is it because of fish?

Will electric cars end climate change and save the planet by 2020? Probably not. But they do seem like a step in the right direction. Rolling back emission standards does not seem like a step in the right direction.

From what I've read, we're actually there now (if you have the $$$$ for solar panels).

The highest estimate I've read so far is 30 solar panels.. can charge a Tesla enough to travel 25 miles per day.

No. A car engine operates at many different revolutions per minute depending on speed and because of that the energy that's used to make your car go is a low fraction of how much oil you actually burn. A power plant - even a coal one - has a predictable operating point and the efficiency can therefore be designed around it. The improvement is significant and they are not close to the same thing at all.

Thus, an electric car is a massive help to the amount of CO2 each person puts into the air and that is the entire point.

Attempt to pivot the conversation. OP says this is about "solving a make believe crisis" and is a clear reference to carbon footprint.

Not that it makes a difference as the marginal increase in pollution per car is also better for a power plant.
