Well the countries you mentioned fell during the Blitz. The Germans was unleashing everything on them as quickly as possible. When the small resistance groups began fighting back was after the main forces have swept through. And later on during the war things was beginning to go south for the Germans by then and most of Germans military might was fighting on the frontlines against the US and allies to the west and Russia to the east. The resistance groups was not up against the same firepower as during the blitz. But they acquired enough firepower themselves to stand up to the German forces in the area.

And Poland wasn't steamrolled the way history likes to portray it. Have you heard of the Battle of Wizna? I encourage you to look it up. It is called the Polish Thermopylae for a reason. The band Sabaton made a fantastic song about them called 40-1 if you want to listen to it on YouTube.
