Simple, really. Head chefs are lazy S.O.B.s. The pencil gives the customers the impression that you actually do stuff in the back of the house, and not just pass all the work off onto the sous chef.

Technically, no it is not a true fact!. CC was the first female American Iron Chef.
But the Iron Chef and Iron Chef America were completely different franchises.
Iron Chef was created and filmed in Japan, while Iron Chef America was (obviously) an American Production
And there was a span of 3 YEARS between the final Iron Chef episode and the creation of Iron Chef America.
So no...Catherine Ann "Cat" Cora is NOT a true "Iron Chef"!

But technically what I meant to say, was that she was the first 'Iron Chef'... but since it had 'America' in the background, I didn't quite feel the need to put that CC was the first female 'Iron Chef America'.
