Tardar Sauce - the cat who plays the character of Grumpy Cat, is a she, but there's no rule that says the character has to be the same sex as the one playing it (think Peter Pan, or Bart Simpson). There's no problem with calling Grumpy Cat a he, or with treating him as male if the meme needs that.
