And if the earth is flat and stationary, why doesn't the sun get larger or smaller as it moves around the sky? The sun staying the same size in the sky fits with a model where the earth goes around the sun, because the distance between the earth and the sun is consistent.

The sun does look larger and smaller all the time. The moon too.
