I've been to Austin once, and find that they put a lot more emphasis on meat and cheese (queso on everything) compared to Mexican Food in California, where they put emphasis on fresh and healthy ingredients like shrimp and avocados.
I practically lived at Roberto's and El Pollo Loco....but I ate at numerous "authentic" mom and pop places that I can't even remember anymore...I miss San Diego sooooo much.

I wouldn't call El Pollo Loco a "Mexican" restaurant. I would say it's a healthier KFC with a mexican twist, because they serve mac & cheese and Mashed Potatoes.
Btw, have you tried Tacos el Gordo in Chula Vista? It's unbelievable!
