Actually most don't. The one's that most people are familiar with, and have the most followers, do. But if you were to make a list of religions with book, and religions without a book, the list without a book would be longer.

It's really hard to be recognized as a legitimate religion if you don't have some form of official scripture.

Wicca doesn't have an official scripture.
Yazidis, one of the most targeted religious groups in the mid-east don't have a scripture, in fact that is why they are targeted because they are not "People of the book"

I'm not bashing the fact that they don't have a book...I know all about the Yazidis situation. The fact that they are being persecuted confirms my statement. When you don't have a concrete, written set of rules, it's difficult to get other people to accept you.
I'm not saying you can't have religions without scripture, I'm simply saying that the vast majority of people need a physical, written dogma.

According to the bible it is >impossible< to totally follow it. But if you don't know the bible well, how can you represent what it says? You're calling every Christian a hypocrite, simply by definition. I don't say that all atheists are horrible people, nor that some don't do great things with their lives. There has to be a dialog, or it's worthless name calling. No good in that.
