Historically speaking the donkey originally was a negative rebrand of the Democrats, specifically Andrew Jackson. Political cartoonists of his day was drawing him as a jack-ass. For whatever reason, Jackson liked the cartoons. He, being a Democrat, made the symbol of the Democrat party the jack-ass.
