The brothers Grimm versions were not always the originals. There were quite a few that were much much older. The brothers Grimm just told their own, extra violent versions of these stories, usually.
Most "fairy-tales" were, more accurately, moral tales, meant to teach that good always wins, so the overly violent versions are not usually the originals.
