It’s social not racist. First , you eat what there is available to eat. Two, you learn to cook and eat what your parents ate. Slaves were given cheap food and food that the owners didn’t want. Then they learned how to make it tasty. Then it was passed down to the next generations. My mother (white) grew up on a farm, where the only meat that was eaten was from cows that quit giving milk. Ever eaten cow? Not steers or heifers, it is tough and it needs to be well done. So that is how my mother cooked.
