Let's say that an EU NATO member does something really stupid (and what are the odds?) and attacks Russia to the point where Putin does his own version of FAFO, would this draw the US in and is this a possible tactic the war hawks have in mind to escalate an already out of control bit of chaos?

It's quite possible. It just depends on if Trump is willing to stand his ground and tell NATO that they FA'd and so now they have to deal with the FO part themselves.
