To finally answer your question, these are the main ways to get the Eeveelutions other than the name thing. Also, you get sun stones the same exact way you get any other evolution stone: certain Pokestops, but they're really unnecessary if you want a Jolteon because Eevees have never been able to use Sun Stones for anything.
Jolteon, Vaporeon, and Flareon need no specific requirements (The only evolution stones in GO are the Sun Stone, Unova Stone, and the Moon Stone, meaning that Fire, Leaf, Water, Ice, Thunder, Dawn, Dusk, Everstone, etc don't exist in GO. Oval stones might exist though.) and you can only really get a specific one of the three in either certain locations or one is assigned to be the main evolutionary option for certain players, I forgor.
Leafeon and Glaceon require the Mossy and Glacial lures. Umbreon and Espeon require walking idk kilometers with one as a buddy and then evolving at day or night. Sylveon's case, you need to get 70 hearts with it as a buddy before evolution.
