honestly, just ignore or anger them until they leave. there's no point in trying to convince someone like that.
As for the actual comment, I always for example saw the "7 days" thing as being the creation of the universe over the course of 7 days, but instead of being literal it meant setting the universe up for the creation of earth. It would make sense to say "7 days" early on so you don't need to elaborate on the inner workings of the universe, something you're already trying to do, adding extra complexity to your texts to any early human trying to read it.
Similarly, if we take a look at evolution, life is a wonderfully complex thing. could God not guide, or if using the logic from the previous paragraph, set up the universe to allow for the larger steps, forming the plants, animals, and eventually us? As I said before, imagine trying to also explain evolution to early humans just so the full explanation of the universe makes sense.
In summary, I believe the literal definition of the words written down in reference to the formation of us as well as the universe itself is the simplification. When our modern understanding is applied to them, the phrases don't become invalid but gain new meaning- which I believe is a testament to them holding some form of truth.
