I thought one of the reasons Texas passed their voter reform and abortion laws was to keep out Democrat Californians running away from the mess they created in California.

That sucks. I also live in a California ex-patriot state, Utah. Salt Lake City is infested with leftists. When we moved here (in 2010) the mayor was a total communist. When he finished his term the next two mayors was and is Democrat lesbians. I don't live in SLC and the city and county I live in is very conservative.

But then my wife and I are California ex-patriots also. We left 21 years ago and we're conservatives. I wasn't born in California. My parents moved there when I was 5 and I grew up there. My wife was born and raised in California.

Y'all are some of the good ones. I know some Cali refugees who moved here to escape the insanity and love it here. Some embrace Texas policy, others seem interested in bringing "just a little" Cali here, which I cannot abide.

Actually I think my wife and I would do well in Texas. I was born in Georgia but raised in California. My wife's father is from Alabama and she was born in California. Texas is part Southern and part Southwestern and so are my wife and I.

Plus y'all got BBQ. In California a BBQ is hamburgers and hotdogs. In the South it is an art form.

I saw a documentary on Rodney Scott's whole hog BBQ in Charleston, SC a couple of months ago. It made my mouth water. My family is from Georgia and Alabama. I don't have any family in SC but after seeing that video I really want to give them a try. It is just a heck of a drive from Utah (where I live now) to SC.

I wish I thought about trying to BBQ years ago. I've been trying to make BBQ on my Weber kettle grill. I'm getting better but my first attempt was baby back ribs. I burnt them to a crisp. After that I got a lot better. I am not where I want to be and maybe I'll have to get a regular smoker to do it right.

You just have to start BBQing in the morning and let it go all day long. Slow and low. Low temps (between 225 and 250ish) for hours. About 4 for baby back ribs. About 8 to 10 hours for pork shoulder (also called the Boston butt). I am scared to try BBQing brisket. It is too unforgiving. When it is done right it is awesome. When it is done wrong it is shoe leather. It doesn't take much for it to go wrong. Pork on the other hand is very forgiving. You really have to try to ruin pork.

Good Lord I'm reading this right before dinner and now I want ribs!

The Missus does brisket in the oven and she seems to have figured out a good system. It gets a sear at 500 for a while and then down to 250 for a couple hours, sitting in aarge roaster full of Gold Buckle sauce. It's thinner than you think bbq sauce should be, but it works well keeping the meat juicy for "the long haul."

There's a ton of videos on YouTube that tell you how to BBQ just about anything. If you want Carolina style, it's there. If you want Texas style, it's there. If you want Kansas City style, it's there.

I think Carolina style BBQ sauce is thinner than normal.

Maybe I'll see if there is a brisket recipe for the oven on YouTube.
