I can get my grill up to about 700F but it takes about 20 minutes of preheat on high with the sear station cranked to full as well, burns a ton of propane and takes longer than my patience usually allows, lol, but I have found that the spontaneous combustion point of beef is about 700F so there is that, lol! Yeah I like to cook, it's my decompression hobby and I love good food so you could definitely call me a foodie for sure!

Smoking is my favorite, I just struggle to find time to do it. My other submission about reverse searing a pork chop after smoking is one of my go to's because it doesnt take as long, only about 45 mins as opposed to several hours.

Lol, the Col. looks so....familiar...somehow. Kentucky is a beautiful state, been there several times. Took a road trip through the mountains over to Lexington once, it was awesome to see the mountains just "melt" down to foothills and then turn into green fields all around. Also visited mammoth cave maybe 10 years ago, that was awesome.

got one question is it rare or medium rare?

Can't remember exactly, it was a while back that I made it but I usually go with med-rare. I will eat filet mignon, sirloin, or other lean steaks rare but prefer the little extra cook on a ribeye so that the fat renders down a bit more, makes it juicier and more tender.
