Palpatine had reasons for not cloning Jedi. If he had cloned Jedi and even just two or three of them went rogue the problem would already be bigger. But yes if they had cloned Jed they would have a pretty much unstoppable force of Jedi clones

I don’t think Count Dooku would have cloned a Jedi.

It's hard to clone force sensitives because you would have to clone every single midichlorian in their body.
