And howdy....yes sir I agree. Never was a fan of kimchi till I became one, lol. Mine is still nice and crunchy but has that sour bite and the addicting funky spice that follows...I'm enjoying it so far! I was surprised at how easy it was to make. I'm also surprised that using fish sauce in anything turned out to be something I enjoyed...to use it as a condiment is NOT in my acquired tastes. But in kimchi, it's pretty good, I'd go so far as to say it's integral to the taste.
