There's plenty of evidence. Starting with the 100's of thousands of signed affidavits which are considered proof because if you sign one and they find out you lied, you go to jail for election interference. Just take a look at what they tried to do to Flynn and Roger Stone.

Any ballots in contention because of questions about the constitutionality of counting them are already set aside and not included in the numbers being posted by the states. If the challenges to them are denied or dropped, they'll get counted and added to the totals.
