PS - I was once a college child, as well...I thought I had it all figured out...then real life hit me in the face and I realized that liberal utopia is unattainable, and it is actually counterproductive to strive for it. He said "Sanders is a communist" right up there earlier. Sanders is a self-styled socialist, which is indeed a different thing. A real Marxist or communist would consider Sanders a centrist. It's pretty impossible to be a communist and get elected in the US. Someone named Hitlerwasright probably stands a better chance.

Not that this meme would make a difference for anyone who otherwise would have been voting for Trump...but Trump. Still not a great candidate, but I don't trust the left right now. I generally don't trust a lot of politicians, but the left seems particularly bent on chaos and destruction right now. And I don't like big government.

ik they support big government, & giving to the poor instead of helping the poor have opportunities. Say what you may, but that trains the poor to be lazy & doesn't give them motivation. (I've been poor btw). The closer you get to financial equality, the closer you grow to communism, which says the government should own everything. Idk if leftism is that far yet, but it may get there one day if it isn't. I've known poor ppl that don't care to work if ppl r just going to give them money. Plus, if everyone's money is balanced out, (Ik many think this would work, but it just won't), then what the heck is the point of being educated or working hard? Just find some basic quick job that requires no thought & u're good. Life isn't fair that way, & there's rlly no way to work that out.
The other thing that i rlly hate about leftism (and many leftists don't even know this) is their hostility toward freedom of speech. I have grown up in a house where my opinion nvr mattered & I always nvr could say what i thought b/c i'd get in trouble 4 believing what i did. Ppl on the left are actually doing the same thing now, reporting what ppl say & getting ppl persecuted or fired or harrassed 4 their stances. The entire concept of that is very offensive to me, as someone who basically lived under that kind of life for a long time. Why do teens not even think about that? They're not homeschooled ppl w/ strict parents that control everything in their lives & can manipulate u 2 do everything they want by freaking screwing your life over if you don't. That's what many leftists have been doing under the scenes & that is a big thing i cannot stand.
Plus their standards of morals is just not great. As a Christian, I don't like that they tend to promote abortion, homosexuality, transgendering, etc., claiming that that's "freedom" when they control our finances & hurt us 4 our stances like i mentioned earlier. Basically we're only "free" to do what's wrong, but not free to have opinions. that's a contradiction in all the wrong ways.
I have other reasons, but there's far too many. I don't always agree w/ everything on the right, but there's far more i agree w/ than on the left.

Murder is premeditated, meaning the police you refer to would have woken up one day and decided "hey, I'm gonna go kill someone today" which is far from the truth, most hope they never have to do that. Cases of misconduct if criminal are most likely going to be considered manslaughter. I'm also not familiar with any of the recent news stories where an innocent person was killed, can you source one for me?

Oh, it's not the same in every state, but I do believe that 2nd degree is never premeditated. I think there are some states who do not require premeditation for 1st degree murder...but almost all do have it as a requirement.

Okay, so the pickle juice will not curdle the buttermilk...I figured that out...but still am interested in your thoughts/tips. Forgive me if we've already gone over this.

PS - I may have done a pickle juice and buttermilk brine before...cannot remember...

Nope you're right, the buttermilk has already had all the stuff that can curdle come out of it already and its acidic by nature, so the vinegar in the pickle juice shouldn't do anything. If it was sweet milk on the other hand...that would curdle. I've never tried both combined but I've had both before and both are good. Buttermilk makes for a more tender and mild chicken, actually sort of strips some of the chicken flavor out IMO so if you use that one make sure to add plenty of other spices to make up for it. Hot sauce is good (lots), and I go for powdered dry spices as opposed to fresh because it mixes in and flavors better. Garlic powder, cayenne, onion powder, allspice or nutmeg (just a little bit), black pepper, generous salt, and you've got a good marinade...not really a brine for buttermilk. The pickle juice, all I can say is use a good kosher dill juice, garlickier the better, and nothing sweet and I've not ever really used anything else in a pickle brine, just let the juice do its thing. I use crappy beer to dilute it though, works great. Like, as in, high life or PBR. Overnite brine with pickle is best, 4-6 hours for buttermilk I think is the sweet spot.

All that said, I've never combined the two so if you try it let me know how it goes! Hopefully this helps...I've got a recipe for buttermilk marinade somewhere if you want it, but not sure how fast you need it since you said asap. Holler back.

Pickle brine is pickle juice and nothing else. The juice is, in my opinion, as good as it gets. Mainly Wienke's jalapeno dill pickle juice. To me, it is the best of the best and the pickles that were in it are, too. I may have told you that before. If not, you need to order some and have them shipped to you (instead of ordering them and letting them sit in a warehouse, paid-for, lol). I am a pickle freak and I've tried everything I've come across. These are my favorite and very few others made me think twice.

I used some smoked Spanish paprika, Hungarian paprika, and a ton of fresh smashed garlic in the buttermilk brine (why do you not call it a "brine"? I thought a brine was anything you use to infuse a protein with enough salt to achieve cell diffusion - this is what I tell my friends anyway lol). Also, plenty of Kosher salt. I forgot hot sauce!!!!! Gonna add some now...only cuz it's a liquid and will be easy to mix in after-the-fact.

Interesting on using a buttermilk brine/marinade within 6 hours...always thought it was fine to do 24 hours.

I am making mac'n'cheese and green bean casserole (with bacon added) for the sides.

Ah yes, air drying...that does really well. I usually don't allow for enough time (or room in the fridge) to do that so I pat dry and coat lightly with some rice flour or corn starch before doing the initial dunk, then seasoned flour, then dunk, then bread again. Sticks pretty well.

Yes, Syracuse salt potatoes...you would think they would turn out really salty but the do not at all, just a very nice lightly salted potato and the new potatoes being nice and creamy anyway just goes really well with the salt, and then yes, lots of butter! They are delicious and super simple to make...it's just a crap ton of salt. I mentioned before but make sure the skin is still on and do NOT pierce it, nick it, or cut them in half. Otherwise the salt will infuse too much and they turn into little salt bombs. The skin protects the potato.

Yes, raw eggs for sure, and I thin mine down again with some more buttermilk which adds (I think) a little bit of that buttermilk flavor right into the crust.

Good tip on the nicking of the skin. I will watch that part. I have high blood pressure, but it's under control...so I can eat a lot of salt, right? LOL...

I also always mix the egg/eggs with buttermilk, and I put some paprika, onion powder, garlic powder, in there. Not a lot of those spices in the egg/buttermilk mixture...a tsp of each...or three tsp of the paprika...

Brines vs. Marinades...hmm...I guess to me a brine (at least for meat) is really meant to infuse meat with mild flavor and a slow penetration of sodium over long periods of time, and I usually associate that with being water based. The solution is meant to be salty, but not too salty and mildly flavored so that prolonged exposure to the brine doesnt overpower the meat itself. Makes for a very moist and succulent meat. Marinades on the other hand are meant to add mostly flavor and use some acid to tenderize the meat relatively quickly. That's why I only use the buttermilk for 4-6 hours, but like any other marinade you can let it sit as long as you want, but the acid may break down the meat too much and make it mushy or even tough. Buttermilk is fairly mild so its probably fine for longer times. But my reasoning above is why I dilute the pickle juice when I brine, just keeps the salt and spice content fairly mild to infuse over a longer period of time. I dont use less pickle juice by the way, so the salt content is still there, it just is a little milder so it doesn't overpower while sitting for a long time. That's just my opinion though, take it or leave it!

Those pickles sound good, are they sweet or savory? That's my only hesitation, I cant stand sweet pickles...gotta be just salty and garlicky for me. I'll send you my favorite recipe for homemade refrigerator pickles here shortly, they're damn spicy but delicious.

Okay, so...I fried my chicken last night. That's right, about 26 hours of brining/marinading before the fry. The buttermilk things/drummies are awesome. So tender and so moist/juicy. The brine really did force in the hot sauce (will use more next time - I used "a lot", but it wasn't enough for my preference), paprikas, garlic (used fresh/crushed garlic and garlic salt), onion powder, and pepper. The pickle brine was also awesome, but I will dilute it next time. It's slightly more pickly than I wanted, but still awesome chicken. I did the best job I've ever done getting a crispy breading/skin that does not fall/peel off that I've ever done! The green bean casserole is the best I've ever made, too...I know, it's not hard, but I added some fermented bean and chile paste at the end and it made the dish so much different, not to mention better, than the norm. Mac'n'cheese was great...just my classic sharp cheddar/smoked gouda/parmesan cheese variety. I threw a small amount of blue cheese in there, too. Gave it a nice, slight funk. I also made spicy cheesy corn...love that stuff. I have some homegrown potatoes to use up tonight and am gonna make a garlic mashed potatoes. I will then have lunch/dinner set up for about 10 days! Thanks for the tips, as always!

I understand the acidity thing with buttermilk, but even my America's Test Kitchen Bible tells me they should brine/marinade for 2-3 hours + 2 hours fridge drying time + up to 6 hours additional time in fridge, for a max of 11 hours. I plan to push it to 12, just because I don't see myself frying them tonight...FYI...these are for a Packers viewing party tomorrow...along with mac'n'cheese and GBC. I was planning to do garlic mashed potatoes and spicy gravy, but the potatoes left in my neighbor's garden have rotted, for the most part.

You are pretty much right on with marinating vs brining, but I think a marinade can also be a brine. A brine can also be a marinade. The acidity of the vinegar in pickle juice can make it a marinade at the same time it is a legit brine. I'm not so sure it works the other way, but whatever. I like your assessment, though.

Get them pickles. Make the freight cost worth it by getting at least 6 jars. You WON'T be disappointed. The pickle juice these are in is totally worthy of drinking, if you don't save it for fried chicken...which I bet you will.

PS - your addition of water to the pickles juice may make that a scientifically approved BRINE...water + enough salt to force salt diffusion...technically, just a water + salt solution, but anyone can add anything to it as long as the salt concentration falls within the scientifically-specified range...which is quite generous

Awesome dude, glad it all turned out! So you did some of each instead of combining? Nice twist on the GBC, I could see how a little miso would go really well with that dish.

I'll have to look into getting some of those pickles, they sound and look delicious. I agree, sugar and pickles just do not belong together...and unfortunately some makers will add sugar as a way to cut the spiciness if they are hot pickles which I cannot stand (I'm looking at you Wickles and Dave's, garbage...). That's why I resorted to just making my own, can't find what you want on the shelf you just gotta make it yourself. I owe you that recipe, I'll try to send it later when I get home from work. Basically it's just a good garlicky kosher dill recipe with habaneros in it. Brought a jar to work one day and everybody kept stopping by asking for another one, so they're pretty good :)

I've also been meaning to tell you, if you've never tried salt potatoes, you should! You mentioned a while back that you were hunting a recipe to use for fingerling potatoes, this would have been perfect as you have to use small or new potatoes skin-on. So simple, but absolutely delicious.

Again, glad the chicken turned out. I said lots of hot sauce but I should have said "more than you think you need", lol. It can get a little lost in the buttermilk, especially if it's a milder sauce like Franks or something. I like Texas Pete for that purpose myself, it's a little hotter than Franks but the flavor is better IMO. Tabasco is good if you like more kick, I use that if I know my audience can handle more heat and that's my favorite. You said the breading stuck really well, what did you do to make it stay?

I can promise you that you will love the Wienke's pickles. Get a P.O. Box, dedicated to pickles, and I will buy some for you! I have a feeling these pickles have the exact flavor profile you are looking for. I have yet to buy a mass produced pickle that has this homemade, garlickly, dilly, fresh flavor. And the heat is perfect with the jalapeno variety. The habanero variety is just as delicious, but the heat prevents me from eating a whole jar at once...which I suppose is a good thing.

Salt potatoes, ay? I just googled this recipe and the first ones that come up are attributed to Syracuse...interesting. Very simple and I'll give it a try. The generous amount of butter certainly is a selling point!

LOL, I used Frank's. I love Tobasco, so that will be used the next time I do fried chicken. For making the crust stick really well, I think setting the marinated/brined AIR-DRIED chicken out at least 30 minutes prior to dredging/flouring is crucial. I'd imagine you already knew that part. I think the air-drying of the chicken, for at least a few hours, has a huge impact, too. Those two things are, from my understanding, the most important things for making the crust/breading stick. Having raw egg in the dredge is also important, but who doesn't use at least one egg when dredging? I'll tell you who, vegans, that's who. AKA...lost souls.

I am also wondering if using corn starch and/or baking powder helps it stick. I know they help make the crust crunchy, but I have a feeling that having a crunchy crust helps the crust stick. Just my intuition, which seems to be very good when it comes to cooking.
