It is hard to believe that the curtain was torn in two, but we have to remember that there were other disciples that witnessed the event.
Mathew 27:51 And behold, the veil of the temple was torn in two from top to bottom.
Mark 15:38 And the veil of the temple was torn in two from top to bottom.
Luke 23:45 for the sun died out. And the curtain of the Temple was torn in two.
These three are the eyewitnesses that recorded this event (All being a disciple of Jesus). There were small prophecies in the old testament that alluded to the veil being torn.
You are correct, Matthew is the only man that speaks of the ones raised back from the grave. God made a promise prophesied by Ezekiel and Hosea
Ezekiel 37:12-13 Therefore prophesy and tell them that this is what the Lord GOD says: 'O My people, I will open your graves and bring you up from them, and I will bring you back to the land of Israel. Then you, My people, will know that I am the LORD, when I open your graves and bring you up from them.
Hosea 13:14 I will ransom them from the power of Sheol; I will redeem them from Death. Where, O Death, are your plagues? Where, O Sheol, is your sting?
Matthew asserts that many (indicating more than a few, but not necessarily thousands, hundreds or even dozens) rose bodily and appeared to many (again, indicating more than a few, but not necessarily thousands, hundreds or even dozens). I am not sure what puzzles you about the amount of Israelites that escaped slavery, but it says six hundred thousand men did. Some historians believe it was somewhere around six-million because they did not include women or children. An army of bones and chariots can be found at the bottom of the red sea. According to Snopes, that is false. I will leave it up to you to decide whether you believe it to be true or not. If you go looking further, you can find documentaries on men and women looking for these chariots. There is a lot of evidence to go by for this part of the Torah. Mt. Sinai's tip is still burnt today which some would call a phenomenon, but I call it God from the historical texts of the Bible.
