That's not quite how it works. Actually, the food you eat is what consumes the plants that consume Co2. If we cut out animal consumption of plants, we'd have so much food leftover to feed people, that hunger would be a thing of the past.
Except that plants are proving to be something we never guessed. They have proprioception (awareness of body position and awareness), and this week there was an article about the ultrasonic sounds they emit when injured.
Eating meat provides energy and the ability to do something beyond grazing.
I'm not saying that we shouldn't treat animals better, and I am not trying to convince anyone to not be vegetarian.
I don't think that forcing all people to live the way some do is a solution for anything.
