Oooh, havarti is good...very underrated. Goat cheese, I'm not a fan of but I just took my wife to a bed and breakfast for her birthday and they served a goat cheese version of caprese salad in tart form and it was frickin amazing...I could eat my weight in that stuff! Goat cheese, julienned basil, and roasted tomatoes on a tart crust and baked...delicious.

If you like spicy, try Cabot brand habanero jack, it's like pepper jack on steroids, delicious.

Also, Dietz & Watson makes an awesome "pepper jack" made with cheddar, makes for the best damned cheese grits you will ever eat...if you like grits that is, it's a southern thing y'all.

I think I love most all of them, so it just depends on what dish I'm eating. I'm also lactose intolerant (being Asian), so while I LOVE cheese, it is unrequited. :-)

I feel so bad for you if you're lactose intolerant...so many goooood cheeses and dairy foods out there! Ever had cotija cheese? It's like mexican parmesan, sort of. Crumbly goodness, awesome on grilled corn!

I’m not sure if I’ve had that, but like I said, it doesn’t stop me from eating it lol. I just deal with the consequences. :-)

A fellow fan of the jacks...Cabot habanero jack, you should check it out. I know you like spicy, this is right up your alley, and Cabot is the bomb in general.

Mozzarella is the only cheese I can eat though. I hate cheese mainly.

I could get into some cherry cheesecake in a heartbeat, but otherwise I prefer my cheese and fruit to be separate! Love me some gouda, especially smoked gouda on a toasted sandwich.
