When I've made it I used the breast meat just because it's easier to get even slices, so white, but you could use dark meat too. It turns out really good actually. I use a mixture of soy sauce, garlic powder, a touch of honey, cayenne pepper, black pepper, a few drops of liquid smoke, and salt to marinate it over night, then into the dehydrator for as long as it takes to get dry. Haven't made any in a while, but might just have to break it out soon since I'm thinking about it.
