Like you, I eat jalapenos regularly and that's a good base level spice to add to just about anything. Sometimes i'll venture a little further and get Serrano peppers, and Habeneros are good on occasion but in small quantities. Also pickled habeneros with onions are a lighter and less punchy way to get some really good flavor into street style tacos. Hottest thing I've ever had was a BBQ sauce of all things, made with carolina reapers. I went to a BBQ festival where you can go around and sample 2oz cups of all the different competitors, and I come across this guy after only hitting 2 or 3 tables so there were 20 more tables or so to visit. He sees me and my brother and straight up pulls the man card and says we're p***ies if we don't throw a spoonful on his sample. So, being the stubborn dumbass that I can be I said sure...biggest mistake I've ever made with heat. I ended up with the hiccups, and snot running out of my sinuses for an hour, my tastebuds were ruined so I couldn't taste any of the other barbeque, and the guy was just over there laughing. Saw him again at another show and he pulled the same crap, so I told him I'd rather not ruin my afternoon with his crappy hot sauce again...he had the nerve to get offended.
