But apparently you don’t add milk—you put in something else at the end of cooking and you don’t put in the pepper either until they are done cooking:)

lol I put milk in. That's how I learned in 9th grade home economics.

I prefer fried eggs, but if I make scrambled eggs I make them "frambled"... I never mix the eggs or add milk or anything. Just out a little peanut oil in a good stainless steel pan on medium low heat. Crack in the eggs and let them "set" about half way. Then use the spatula to break them up and stir a bit, and don't overcook. This way it's not just a yellow weird textured mess. You still get the mix of yolk and whites, but sort of scrambled. I was an executive chef for a decade and people always loved them, and my wife still loves them. :-)

Are you no longer a chef? I’ve heard that it’s super stressful.

That's how my fried eggs end up, even though I am trying to make them Sunny Side Up. I am more the layman eater versus executive anything. Kudos to you for hanging in there for that long with all the stress.

I saw how Chef Gordon Ramsey scrambles eggs on Master Chef. If he saw my method, he'd kick me out of his kitchen. :D
