Because that's not how evolution works. The common ancestor of humans and other modern hominoids was not the same as either one we see today, just as your siblings are identical neither to you, nor your parents. And it's also worth mentioning that humans are still apes, both monophyletically and paraphyletically, for whatever paraphyletics is worth.
