Even though he can summon portals to the Dream Realm, I like to think that Pest Sprout prefers going there the normal way: sleeping.
In terms of the Dream Realm quests, I imagine them have some exclusive rewards that you couldn't get in a normal quest. Maybe things like +1 Defense from nightmares, +1 chance of sweet dreams, etc.
