It's animations meant to look like they were taken on old tape recorders, usually for analog horror series. They're not actual gameplay, just animations from fans. Fnaf doesn't have any explicit gore or anything, save for springtrap and scraptrap, and even they don't have that much detail.

Fnaf ain't gory. Those videos are likely clickbait trying to get the "the fnaf movie shoul've been rated r cuz dark!" crowd who are really just idiots who are insecure about the fact they like something made for kids.
