Also pan is sometimes referred to as being ‘gender blind’ because gender doesn’t matter in your attraction. You generally do mind the gender with bi, so kinda preferences like I said a few seconds ago.

Well technically bi isn't strictly men and women (and also why would bisexuality exclude trans people) but there's definitely a difference in how or what ways a bi person is attracted to different genders.

Bisexual is often used to describe attraction to men or women (trans OR cis), whilst pansexual's definition is below. The reason they exist separately is because pansexual is a more widespread term, while bi is, by definition, attracted to men in women. The term bisexual is derived from the Latin word 'bi', meaning two. The attached image further proves this. Bisexual may sound like it means the same as pansexual, but is by definition, different and less of an open term.

I know they're not the same, but my understanding is that pansexual is generally "Likes all genders with little preference" and bisexual is "Likes more than one gender, usually with some preference." I've just seen it explained that ways multiple times is all.

There almost the same thing. Bisexual typically refers to strictly men and woman (however, doesn't have to be)
Pansexual is attraction regardless of identity.

However, they can technically be used interchangeably.
