I wish that in the next Minecraft update, we could choose which major update we could create our worlds in so then we could receive more nostalgia from the older updates (ie, old netherrack and cobblestone textures, when gravel was used for trails instead of dirt trails, etc).

You can do that with the Minecraft Java edition launcher
