Eevee, being the 'child' of the group would probably be riding at the top of the cart begging for literally anything they found interesting, either that or being on an ipad.
Vaporeon is a water type so they would want lots of water, and i'm sure you might know that person who always tries to overstock of that one thing they are obsessed with having lots of when at the grocery store, you don't need that much dude, just get 1 or 2 it won't even fit!
You may or may not have seen boxes of soda stacked into 2D art at large stores, and Umbreon being a dark type is just the one to act on the devious thought of knocking it over for no reason, if not Jolteon he's definitely the guy who gets everyone kicked out and says "worth it lmao."
Jolteon is simple, he's an electric type, so I always get 'gamer vibes' from him, like he would love electronics, but he's always the second most likely to get into trouble, heard the story of the guy who tried to steal a PS5 from a Walmart?
Ughhhhh, we all know that person who will find their friend at the store, usually one of our parents, but Espeon seems like the 'sensible' one in the family and as a psychic who evolves with friendship, they form bonds easily so they would know everyone working at the store from coming so frequently.
Glaceon is another obvious one, and Frost would actually be like this too. Some people at the store actually like spending time in the freezer isle, and Glaceon is no doubt an example of that.
Alright alright, poor guy is the butt of every bad joke among people who like the Eeveelutions due to his uses in a competitive setting, Flareon is often portrayed being a dumb little woobie who can't do anything, though we can't help but relate, we've all been lost in the store as a kid.
I dunno about you but I know my parents would sometimes come to Walmart or Home Depot just to check out what plants they have, I'm sure any avid gardener would make plenty of trips to the store specifically for gardening supplies, considering Leafeon is an actual that fits perfectly.
Ah yes Sylveon... the girly one, literally the definition of 'extra' by those who like and dislike her design, Sylveon literally has ribbons as part of their body! So they are definitely the one who would take everything in the clothing isles and lock themselves in the fitting room.
