It's like asking why they don't just turn off their lightsabers to make their opponent stumble

It's cheating, and being a dick.

1. Sith didn't care about being/slashing dicks. Trakata was banned because they viewed it as a cowardly strategy.

2. Trakata doesn't realistically work because you're giving up your defense for a chance of messing up your enemy, who should be swinging at your body to deal damage.
