For example, a man would be castrated, and in the place of naturally occurring organs, surgeons would remove a section of his large intestine, reattach his large intestine and then fashion a facsimile of female organs in the former location of his man parts.
Having been a farmer I can tell you that of all the bull calves and male pigs I castrated, none became female. They all however had no reproductive desires, increased appetites and became delicious meals for thousands of my fellow human beings.

A strawman argument is when you distort someones claim and argue against the distorted claim to make your argument look more valid. For example, if someone said that saying that chromosomes is the end all be all of determining gender doesn't account for chromosomal deformities. And you responded with some nonsense along the lines of "So I guess XX chromosomes could make you an elephant". That is a Strawman argument since you didn't respond to the actual claim, and instead distorted it so you don't have to respond to it.
