CA farmers are basically forced to grow walnuts and almonds, because they produce the highest profit / yield per water ration. In CA, it is against state law to have a well on your own property, so farmers cannot dig wells or water pumps to water their own fields. That have to buy "water rations" from the State and when CA started fracking, the large fracking companies were given priority to purchase water rations, leaving the rest of CA farmers to have less water rations, which meant they had to change their crops from fruits and vegetables, which they could get some subsidies, to higher profit margin crops like walnuts and almonds.
