Let's Go: Eevee first obviously, I think I remember hearing about an alternate version of Pokemon: Yellow where you get Eevee as a starter instead of Pikachu.

Technically doesn't count as Eevee but there's an obscure GameCube pokemon game called Pokemon Colosseum, where you get Espeon and Umbreon (Both) as a starters.

And then if you wanna count Pokemon Cafe as a 4th game even though it's only a spin-off.
