Well if these are happening to you, I can diagnose you.

They're called hypnic jerks. They happen just before you fall asleep and can cause panic and are also accompanied with a feeling of falling and legs shooting out.

You can prevent them by reducing caffeine, nicotine, and alcohol intake, reducing stress and not exercising 2-3 hours before going to bed.

The chances of you dying in your sleep are astronomically low, and it is likely on of the best ways to die considering you're usually not panicking or terrified when it happens and probably not in any form of pain. Being scared of going to bed because you may die is an irrational fear especially considering that dying due to a lack of sleep is a far worse death.
