Start with TNT Evilution and then play The Plutonia Experiment. TNT is a raise in difficulty from doom 2 but it is still very reasonable and fair but Plutonia is a huge jump in difficulty. If I had to rank all of the iwads from best to worst it would be
Plutonia
TNT
Doom 2
Doom 1
