This is an Eggyhead from an alternate timeline, where after Zanthor destroyed his universe, Eggyhead cracked (pun intended) and went on a rampage, destroying galaxy's, and getting stronger. Eventually, Eggyhead found Zanthor, killed him, and took his power. The Collecter in their dimension found out about it (he was slightly weaker than our Collecter) and challenged him, after a long battle, Eggyhead killed the Collecter, and took over his timeline.

Several points that don't make sense

Eggsman says there is only one zanthor, I know, I didn't think it made sense either

However the collector has a better reason for being the only collector

The collector can only happen if he obtains the crystal of creation

And there is only one crystal of creation

So we could say this is a what if bossfights story
