Anakin cannot block a bullet or otherwise metal or kinetic based projectile with his lightsaber, otherwise the shrapnel would make him blind or otherwise seriously injure him. The bullet would also be too fast for them to react and use the force unless they were expecting it. This is how mandalorians used to kill Jedi I think.
