I remember reading about a guy who shot himself in the shoulder with a shotgun and called it art. Some asshole in NY charges people $100k to duct tape a banana to their wall in the name of art, and he's gotten multiple takers. Numerous people have hung blank canvases or canvases painted white as works of art. Meanwhile I sneeze a Jackson Pollock into my hanky and it only becomes art after I frame it.
The point is really that human intent is what defines art, rather than the subject or product. Which curiously could mean that a defacto masterpiece could be created without artistic intent and therefore not be art. (Someone else could take a picture of it and call the reproduction art. That's how nature becomes art--by being reproduced.)
Performance art is a thing too. Whenever a cop pulls me over for speeding and asks what I thought I was doing, I tell them I'm creating a renegade act of performance art with the added purpose of increasing revenue for the state.
