I would say, 3 days. There are 7.4 BILLION people on this Earth. 1 Mt.Everest of food would be nothing to sustain that.

so mount everest weighs 357,000,000,000,000
and the average person eats 4 pounds of food per day, although you could eat just one pound a day (I don't recommend it though) if you had to
and there are 7,900,000,000 people on earth
375,000,000,000,000 divided by 7,900,000,000 is 47468.3544304
so it would take about 47468 days to run out of food if everyone was rationing and being careful, which is 6781.19349005 weeks, 1582.27848101 months, and 131.856540084 years, which is more than a century, although this is rationed out the entire time
If people were eating normally and eating 4 pounds per day, we would get 11867.0886076 days, which is 1695.29837251 weeks, 395.569620253 months, and 32.9641350211 years.
So in summary
if everyone rations out their food it will last for 132 years, but if they don't, it will only last 33

Mount Everest is about 2.1 trillion cubic feet

I kind of cheated and got basic pounds per cubic foot of food you need to live on and calories per pound of said food from https://www.survivalistboards.com/threads/food-storage-by-the-cubic-foot.162298/

Beans rice and grains have an average caloric density of 1546 calories per pound, and have an average density of 44 pounds per cubic foot

Multiplying those together, you get 68024 calories per cubic foot

Mount Everest has the volume of 2.1 trillion cubic feet. Multiply this volume by the caloric density of the food and you get 142.8504 quadrillion calories basic, densest foods human need to live on can fit in Mount Everest.

There are many estimations of how many calories humans need to live on (they're not the full story), but I found a pretty common estimate for somewhat active people is 2300 calories per day. Multiply this by the US census bureau's global population estimate as of June 2021 of 7,557,130,400 people and you get that the entire population of Earth consumes about 17,427,399,920,000 calories/day.

Finally, divide the total number of calories in Mount Everest's size by the daily caloric intake of Earth's entire population, and you get about 8197 days, or 22.45 years.
