How prepared is "too prepared"?

yup....apparently I extremistly canned blackberries and raspberries last week.

This shit is getting ridiculous

I'm jealous! We used to get some awesome wild blackberries back in Ohio. There was one year where we went to a pick your own strawberry farm. Between me, my dad, and brother we overdid it and filled the back of the truck. Mom & dad were up all night freezing them.

I canned 42 quarts of blackberries last week. I couldn't can them fast enough - I threw away almost 2x as much as I canned. Same with the raspberries. I didn't have quite as many raspberries. I managed to can 7 quarts - and put them on hold to get blackberries done. Everything happens so fast in the garden, it's like 0 to 60 overnight - then the heat hits and nearly kills everything.

I can't get but a few handfuls here, but I did get 61 quarts if blue lake beans put up and 100 ears of corn froze

I just finished canning corn this afternoon 18 quarts. Now I'm starting on the squash.

The electric/automatic pressure canner is an awesome tool to have. The second half of the process is fully automated. I just keep an eye for the canner to say "OFF" and then I check the pressure - when it's released, I can pull the cans and start the next batch.

That sounds like quite the apparatus... I got a all american canner that I bought earlier this year... It is becoming a lost art form

It's really just a instant pot with a more sophisticated timer.
