They aren't. I'm a suburban people and I only know of one other suburban people that likes kale. Kale became very popular when it was decreed a "superfood", which is not a real thing. It is a healthy alternative to lettuce and other greens that are lacking in nutrients, but "superfood" is a duplicitous, made-up word. Frankly, I've always associated these "superfoods" (acai, avocados, etc.) with very liberal-thinking people. They were all the rage when I was in college. Go to any college town and go to the restaurants and you will find trendy "superfoods" on the menu. Same with most downtown, restaurant areas of large cities. The food scene is extremely liberal-leaning and it is obsessed with "superfoods". Suburban areas tend to be more conservative-thinking, and I truly don't believe a lot of conservatives are jumping out their pants to eat kale and acai berries.
We're both making generalizations here. The truth lies somewhere in the middle, too.
