That's the joke. You can't name something you don't know anything about because you at least know the name and that counts as knowing something about it. It's impossible to do this. That's why it's fun.

But...you start out knowing it is either existent or non-existent. That's knowing something about it.

That’s like saying every single thing in the world is living or nonliving. You don’t know whether a certain thing is no living or not, but all you can narrow it down to is to two different ideas. Until it falls into one of those categories, you don’t know about it. And therefore you are just making a guess, which is different than knowing. Just trying to beat the system.

You're missing the point. It's a unsolvable brain teaser. Just like you can't actually prove you exist, you can't name something you know nothing about because as soon as you name it...you know something about it. Actually as soon as you think of something you know something about it. You know you thought about it.
