They don't fear light....

But they do fear cats

I could simply not look at them in the eyes

Well I could simply jump into some water, look them in the eyes, and just camp and kill them there because Endermen don't like water.

I'd use an underground base, its easy to expand plus its hard for your enemies to find, plus you can use glowstone as light, so its self sustaining
