I see Classic, Fell, Swap, Swap Papyrus, Dust, and Last Breath, but who is the one in the middle and the one on the bottom right?

Outertale and Aftertale.

Ahhhh... who are Outertale and Aftertale?

The video wouldn't work, is it possible to tell aftertale in a nutshell? Like for example:

Last Breath in a nutshell: After 30 genocide runs, Gaster appears and tells Sans that you plan to do another one, so Sans swears on his last breath that he would bring you down.

Okay so basically Sans injected himself with Determination to hijack the resets and has the memory from other alternates Sans AUs and is stuck in the void with Frisk. He eventually becomes Fatal Error Sans but that's a tale for another time.
